I took this recipe from allrecipes.com
Made some minor changes to it
It turned out well, my mom actually liked something I baked and has been nagging me awhile now to make her something, anything coconuts.
INGREDIENTS:
5 1/2 cups flaked coconut (I used Baker's sweetened coconuts, 1bag)
1 (14 ounce) can sweetened condensed milk I used fat free
2 teaspoons vanilla extract (I used 1 to 1.5 tsp)
1 1/2 teaspoons almond extract (I used 1 tsp)

DIRECTIONS:
Preheat oven to 350 degrees F (180 degrees C).
In large mixing bowl, combine coconut, sweetened condensed milk and extracts; mix well.
Drop by rounded teaspoonfuls onto aluminum foil-lined and generously greased baking sheets. Bake 8 to 10 minutes (It took me 35 minutes to have them golden brown on top. I find that the balls take longer to brown. If you make it into a ball and then flatten them with a spoon, they brown quicker and nicer.) or until lightly browned around the edges. Immediately remove from baking sheets. Store loosely covered at room temperature.
