My DH just got back from Michigan raving about the flat iron steak he had when he went out with his parents. I looked online and found a recipe, but the ingredients call for "flat iron steak". I've never heard of this. I just assumed it referred to the cooking method--not the actual cut.

Thank you! That was very interesting--and it sounds really good. I think I need to get out more, because like I said, I've never heard of it. From what I read, I don't think I'll be coming across any in the Dom's clearance section either

I just tried a new butcher down here and asked for flank steak. He told me about flat iron and said that it is a much better quality, you don't have to marinate it for it to be tender, you don't have to cut it across the grain like flank steak.

So, we tried it. The cut is very similar to flank steak. It was good, nice and tender and the kids ate it, which is always a plus!
