any good pumpkin seed recipes?

I have a container of pumpkin seeds in my fridge right now and have been looking at recipes online to roast them and am having a hard time choosing one. I always gave my mom our pumpkin seeds and she would roast them with oil and salt i believe, this year I decided to keep them and try a recipe myself. Was hoping if anyone has a favorite they use every year you could post? Thanks!
 
I always just put a tablespoon of oil, salt and seasoned salt and bake them until they are browned. Yummy!!
 
If you just like them salty...this is how I do it and it seems to be the best way for me.

Soak them in salt water for 24 hours.
I pick out all the pumpkin junk first.
Strain and pat dry with a paper towel.
Try to get them as dry as possible.
Spread on a baking sheet in a single layer or as best you can.
bake on 275 and mix them up every 15 minutes.
I baked mine for about 30 to 45 minutes.
If you bake them too long they will start to brown and get a bitter taste to them.
After baking let them cool on the baking sheet.
They may not look done but you don't want them to dry out all the way.

I am sure that you can add garlic along the way while they are baking if you like garlic.

They are pretty much like the ones that you buy in the store if you don't bake them too long.

It has taken me a few years to get them right....I always seem to burn them....LOL....but this year they turned out great!
 
After all the gunk is cleaned boil the seed in heavily salted water for about 10 min. Drain them well and toss them with olive oil, garlic salt and ranch dip mix.(don't have exact amounts cuz it depends on how many seeds you have) Bake at 300 for about 30 minutes then raise the temp to 350 until they are dry but not brown. Been making these for years and everyone loves them!
