Please share what you do to dress up a cake mix. I have a ton and am always baking from scratch instead.

I have a lot of pears that I want to make into a bread but once again the recipe is from scratch. I want to use some of the cake mixes stat.

I make pound cakes...I think there's a recipe on the Duncan Hines boxes...you add a box of instant pudding and maybe an extra egg...I make mine in a tube pan...

I make struesel cakes with the yellow cake mixes...mix as directed...pour 1/2 in the pan...sprinkle with a struesel mix (cinnamon, sugar, chopped nuts, a little butter or oly to make it lumpy/save some for topping)...pour in rest of mix...top with struesel...sometimes I replace the oil with sour cream...

Somewhat OT, but does anyone have a great tasting recipe to make a cake mix from scratch...would prefer to add flavor w/out fat like butter, margarine..TIA.
 
My MIL uses just a chocolate cake mix, a can of cherry pie filling and 2 eggs to make a black forest cake. Topped with cool whip it is quite good. You don't need to use a mixer otherwise the cherries will break apart. You can also use apple pie filling with spice cake, etc.

I have lemon, yellow and chocolate mixes. I also have a ton of white with chocolate chips for Christmas. I wanted to make cake balls with them but I really hate frosting so I never have.
 
This first one is soooooo good!





Aunt Fran’s Coffee Cake (we don’t know any Aunt Fran, Mo found this recipe)
Serves 12-16
Preheat oven to 350 degrees
½ c sugar
2 tsp cinnamon
1 package yellow cake mix
1 small package instant vanilla pudding mix (still use this even if cake has pudding in it)
4 eggs
¾ c oil
¾ c water
1 tsp vanilla
1 c chopped pecans
Glaze:
1 c powdered sugar
3 Tbsp milk
In a small bowl, combine sugar and cinnamon. Set aside.
Combine pudding and cake mixes with eggs, oil, water and vanilla. Mix well (mixer)
Grease and flour a 9 x 13 inch pan. (This pan rises considerably and needs a large pan) Sprinkle half of the nuts on the bottom of the pan. Carefully spread half of the batter over the nuts. Sprinkle with the entire sugar and cinnamon mixture. Add the rest of the batter and carefully spread over the sugar mixture. Sprinkle top with rest of the nuts.
Bake at 350 for 30 – 35 min, or until a wooden toothpick comes out clean. Mix glaze ingredients in a small bowl, (no mixer) and drizzle over cake while hot. May be served warm or cool. Cover with foil for storage.



Black Russian Cake


Preheat oven to 350 degrees. Grease and flour a Bundt cake pan.
In a large mixing bowl mix:
1 pkg yellow cake mix
1 large (5.9 oz) pkg instant chocolate pudding
½ c sugar
1 c vegetable oil
¾ c water
4 eggs
¼ c vodka
¼ c Kahlua
Mix on low speed 1 min. Mix on medium/high for 4 minutes. Pour into prepared Bundt pan. Bake 60-70 min. (Depending on your oven, you may want to cover the cake with a piece of foil about half way through.) Cool in pan 10 min. Invert cake on cake plate. Poke holes in cake with a fork. Pour glaze over cake. Cool and dust with powdered sugar.
Glaze:
1 c powdered sugar – sifted
½ c Kahlua
Mix and drizzle over cake. This cake keeps well if covered tightly.
 
Thanks those two look really really good. I especially like the second one for it's creative use of booze which I actually have on hand. :) The first one looks equally delish.
 
I just cut up some ripe pears, chopped up some apples coated them with sugar and cinnamon placed them on the bottom of a baking dish. Whipped up a yellow cake mix and put it in the oven. I hope it comes out good. I needed to use up some fruit around here because MIL just dropped off a huge bag of apples and more fruit, UGH we need to take her car away from her. She is a krazy fruit buying grandma that doesn't understand that we can't eat so much fruit.

***This recipe I made up is delish!!! Turned out great.
 
I've made pineapple upside down cake with yellow cake mixes.............I need to find that recipe...........it's delish!

Thanks everyone for the yummy ideas...........I too have a ton of cake (and brownie) mixes to use up.

I recently made funfetti cookies (frosted) out of a cake mix. They're way sweet, but oh so yummy!:cartwheel:
 
I love pineapple upside down cake and would make that in a heart beat but DD is highly allergic to pineapple. I'm going to try making it with apricots instead.

Oh that stinks. I don't know if I've ever heard of someone being allergic to pineapple. :pout:

Let us know how it turns out with the apricots. :)
 
DH just made these cookies from a recipe we tweaked from myrecipes.com, very good!

1 box yellow cake mix (he used white)
2 c quick cooking oats
1/4 c sugar
1/2 c vegetable oil
2 large eggs
1 cup dried cherries (could use raisins or walnuts but we had cherries)
1 T vanilla
half bag chocolate chips

Preheat oven to 350. mix first 3 dry ingredients in 1 large bowl. Mix wet ingredients separately; add to dry ingredients in bowl, combine. Fold in chips and cherries. drop by spoonfuls onto lightly greased cookie sheet. Bake for 12 minutes. cool on racks.

Next time I might try adding more oatmeal and using spice cake mix instead. I might chop some apples very fine and use those along with chopped walnuts instead of cherries and chocolate chips.

German Chocolate Bars

Crust/Topping
1 German Chocolate cake mix
1 1/2 cups quick cooking oatmeal
1/2 cup butter (softened)
1 egg

Filling
1 can coconut pecan frosting
1 8oz package cream cheese (softened)
2 eggs

Grease 13 x 9 pan
In large bowl combine: cake mix, oats, butter, and egg. Mix at low speed until crumbly. Reserve 2 cups for topping. Press remainder in bottom of pan.

In a separate bowl blend frosting, cream cheese, and eggs. Beat at high speed for 1 minute. Pour over crust. Sprinkle reserved crumbs over filling.

Bake at 350 for 45-55 minutes.
