Neighbors gave me zucchini yesterday, DH wanted cake.

Cake:
5 oz semisweet baking chocolate
3 C flour
1 tsp salt
1-1/2 tsp baking powder
1 tsp baking soda
3 C sugar
1 C oil
3 large eggs
3 C grated zucchini
Melt chocolate in a double boiler or microwave and allow to cool. Grate zucchini, including skin (remove large seeds). Beat eggs. Add sugar, 1 cup at a time. Then beat in chocolate, oil, zucchini. Sift in dry ingredients and mix well. Pour into greased round pans and bake about 40 minutes at 350 degrees. Cake is done when inserted knife comes out clean. Cool on a rack before frosting.
Frosting:
1 stick melted butter
6 TB baking cocoa
4 TB warm water
1 tsp instant coffee
3 C powdered sugar
Lump of soft, whipped margarine about the size of a small egg
Beat melted butter, cocoa and coffee. Add powdered sugar a little at a time. Add water. Then beat in the margarine. Frost cake, spreading frosting between the layers. I put chopped walnuts between the layers and coconut on top (cleaned out the freezer).
DH says it's OK to eat, it's a serving of veggie!
