Thanks guys - I was happy with how it looked all put together.
I'm competing with a carrot cake! :lol: One of the guys brought in a cake that his wife made. They're each about a quarter gone. I haven't tried the carrot cake yet but did have a little piece of mine. The chocolate cake part was delicious but it kind of overwhelmed the coconut part. I think for the others I make I'll add a bit more almond extract and a bit more coconut and maybe even increase the total amount of filling. The cookies are going pretty fast - they're easy to grab and go.
