Egg salad recipes

I put diced Onion, pickles and tomatoes in mine with of course mustard and mayo (to taste) .. and a bit of peprika on top!

I do the same for tuna as well - the mustard of course.
 
We like these...I don't have a real recipe, as I wing it, but this is basically it...from mrbreakfast.com...I've never put cinnamon or nutmeg in mine...

Scotch Eggs
(4 servings)


•1 pound bulk pork sausage
•1 tablespoon fresh parsley -- chopped
•1 tablespoon grated onion
•1/4 teaspoon ground cinnamon
•1/8 teaspoon ground nutmeg
•4 hard-cooked eggs -- shelled
•1/2 cup fine dry breadcrumbs
Combine sausage, parsley, onion, cinnamon and nutmeg; mix well. Divide sausage mixture into 4 portions; shape into patties. Place one egg atop each patty, shaping the sausage mixture around egg till completely covered. Roll each sausage-covered egg in breadcrumbs. Bake in a preheated 350 degree F. oven for 15-20 minutes until golden brown

I think if MrsMom was making these she'd add the Scotch!
 
No real recipe but I use mayo, mustard, sweet pickle relish, dash vinegar, salt, pepper, celery seed and my super secret ingredient...about a tsp. of prepared horseradish.
 
I'm a purest with my egg salad.

Mash the yolks with some dijon mustard, add in mayo till creamy, then stir in the egg white. black pepper and salt (if needed) I do my deviled eggs the same way and then dust with paprika or parsley flakes.

Tuna Salad: I add a tiny bit of finely diced onion and some celery, very finely shredded hard boiled egg. 1 Tbsp cream cheese and mayo until it's the consistancy I like. Salt and pepper to taste.

potato salad: I always add some diced hard boiled egg to my potatoes. I also add finely minced onion, some diced celery, chopped bacon, mayo and salt and pepper to taste. The egg makes it creamier!

You can also freeze eggs whole right in their carton. or crack them into baggies and label how many are in there - but then they are bes for scrambled eggs, or if you freeze in 1 or 2's if you have a lot of brownie mix.

Oh and EASTER!!! We'll be dying a lot fo eggs this year :)
