Lemon curd recipe

I've always loved lemons and when I brought those Jello Tempations the lemon meringue flavor I thought hmm there has to be a recipe for something similar without the pie part. I found this recipe for lemon curd and made it today. It is so yummy and super easy to make and if you are buying butter for Easter good thing you'll need it for this recipe. If you live near Jerry's Fruit Market in Niles they have bags of lemons 20 for $2 so it make it cheap to make.

I just get Jello Lemon no-cook pudding, make it, set it, then add fresh lemon zest on top!! Easy peasey!
I use skim milk to keep my girlish figure!

I can't! I read the ingredients on that stuff and I just can't make myself buy it, no matter how cheap! I know, I know, adding lemon jello won't be any better! (((sigh))) trying to eat healthy is for the birds sometimes! Knowledge is power, right?
