Plantanos as appetizer

I'm new to spanish/mexican cooking -

I am looking to use plantains as an appetizer base - I'm a great cook, can figure out any recipe - but.....I don't want a 2 hour ordeal. I'm having company tomorrow night - potluck - and my contribution is the appetizer - so throw out some recipes - I'm thinking not yellow plantains.

And, if anyone has any dessert recipes for them, please provide.

I've got a recipe for a plantano con queso ball-thingy - using the plantano as dough - but I have no idea whether to buy green or almost yellow plantains for that one.
 
Green plantains are firm and starchy, and resemble potatoes in flavor. Yellow plantains are softer and starchy but sweet. Extremely ripe plantains are softer, deep yellow pulp that is much sweeter than the earlier stages of ripeness. It would depend on whether you plan a sweet or savory type appetizer, I suppose :)

There used a lot in cuban food, they just cook the ripe ones until they carmelize on the outside...
