Pumpkin recipes?

1 can of pumpkin (15-16 oz)
1 box of cake mix (cinn swirl, spice cake, or any cake mix on hand)
1 egg
1 shot of oil (I never measure)

you can't mess this recipe up!

makes 12 huge ****ins - sprinkle with nuts

That's like 2 cups of pumpkin, right?
 
this makes great coffee cake, btw!!! Im tempted to make this but don't want to clean up


chocolate pumpkin loaf
Ingredients:

1 cup all-purpose flour
1/4 cup whole wheat flour
1/4 cup unsweetened cocoa powder
1/2 cup sugar
3/4 cup packed brown sugar
1/2 cup liquid egg whites
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 can (7.5 ounces) pumpkin
3/4 cup chocolate chips
Directions:

1. Preheat oven to 325*F. Grease loaf pan.

2. Combine all ingredients in large mixing bowl; blend well.

3. Once mixed, pour batter into loaf pan.

4. Bake for 40-45 minutes, until top is firm and a toothpick comes out clean.

5. Allow loaf to cool for 15 minutes; dust with powdered sugar (if desired).
 
Eating a pumpkin ****in right now... YUMMY! I used a spice cake...

If the baby cooperates I may make the Chocolate loaf later... sounds yummy
 
Spicy Pumpkin Cookies (courtesy of Betty Crocker website)

Prep time: 10 minutes, Total time: 1 hour, Makes 2 1/2 dozen cookies

1 box Betty Crocker Supermoist yellow cake mix (Spice flvr also good)
2 teaspoons pumpkin pie spice
1 cup canned pumpkin (not pumpkin pie mix)
1/4 cup butter or margarine softened
1/2 cup raisins or dried fruit (cherries, cranberries)
1 cup BC vanilla frosting (optional)

1. Pre-heat oven to 375 (or 350 for dark or non-stick cookie sheets). Lightly grease or spray cookie sheet.

2. In large bowl, beat cake mix, pumpkin pie spice, pumpkin and butter with electric mixer on low speed for 1 minute. Add raisins or other dried fruit.

3. On cookie sheet, drop dough by generous tablespoons 2 inches apart.

4. Bake 11 - 14 minutes or until set and light golden brown around edges. Cool 1 - 2 minutes. Remove from cookie sheet to cooling rack. Cool completely. Frost with Betty crocker frosting or your own icing. I prefer the Wilton cookie icing in squeeze bottles (white, red, green in color) - super easy, dries hard to the touch.

**You can also add 1/2 cup nuts if you like.

If you've got some cake mix around from doing deals last month, this is a great way to make some holiday treats. :giggles:I've made them about 4 times and given all away to friends and family.

Makes:
10 servings, 1/2 cup each

What You Need

1 cup cold milk


1 can (15 oz.) pumpkin


2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding


1-1/4 tsp. pumpkin pie spice


2 cups thawed COOL WHIP Whipped Topping


1/2 cup chopped PLANTERS Pecans


1 Tbsp. butter or margarine, melted


1/3 cup firmly packed brown sugar



Make It

BEAT milk, pumpkin, dry pudding mixes and pumpkin pie spice in large bowl with wire whisk 2 min. or until well blended. (Mixture will be thick.) Gently stir in whipped topping. Spoon into 10 dessert glasses.
REFRIGERATE 4 hours or until set. Meanwhile, toss pecans with butter and sugar. Store in tightly covered container at room temperature.
SPRINKLE pecan mixture over desserts just before serving. Store leftovers in refrigerator.

Size-Wise
An occasional dessert can be a part of a balanced diet but remember to keep tabs on portions.
Substitute
Substitute PLANTERS Walnuts for the pecans.
Jazz It Up
Garnish with currants, a light sprinkling of ground cinnamon and fresh mint leaves just before serving.
 
A-to-Z Fruit Bread

This is really called A-to-Z Bread, but I call it ABC Bread becuase I always use Applesauce, Bananas and Chocolate Chips. You could use pumpkin as one of your fruits.

1 C oil
3 eggs
2 C white sugar
2 C fruit (see list below)
1 T vanilla
3 C flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 C chopped nuts (I skip these)
1 T cinnamon

The recipe doesn't call for chocolate chips, but I add 2 C or however many I have on hand.

Cream together oil, eggs and sugar. Add other ingredients listed. Bake in 2 greased loaf pans at 325 degrees for 50-60 min.
