Incase any of you don't have enough cheap bailey's from the rebates - try this recipe. I make it every year for xmas and it's really good.

1 cup of Jameson's Irish Whiskey
1 can of condensed milk
1 1/4 cup of whipping cream
4 tblsp chocolate syrup
1/2 tsp coconut extract
3 eggs

Blend them all together, chill it in the fridge for a little while and enjoy!!

Mmmmm, sounds delicious! I think I might try this when I run out of Bailey's.

Thanks for the recipe, I had no idea you could make this at home.:15:

That sounds great! How long does it keep in the fridge? Does it separate?

You've reminded me that I wanted to try homemade Kahlua this year...gotta dig up that recipe. I'm starting to sample all the flavored vodka I made this summer....so far, spiced cherry is my favorite.

My rule of thumb for how long it will keep in the fridge is a combination of the exp date on the eggs and the cream. So - maybe a week or so after those dates? I figure the alcohol has to be helping out some! And it doesn't seperate - you should shake it well before you drink it cause sometimes the chocolate will settle at the bottom. I use those rubbermaid drink type thingys to store it in so it's easy to pour!
