What's for Easter dinner?

I have volunteered to host Easter dinner/lunch for my in-law's. I DO NOT COOK!! Yikes, I have no idea what made me volunteer other than MIL is getting to old to host us all and my one SIL shouldn't have to host everything, every time. There are 10 children in my husbands family and he's the baby, I'm not sure why the others don't step up and we all take a turn, but I digress. It's me this year :0)

What in the world do I make? What does an Easter menu look like??? Help for the hopeless!!!

I am thinking around 2ish to eat....thoughts????

All input is appreciated!!
 
This is our first year that we won't be traveling at dinner time, so I'm trying to figure it out too. We don't do that early for dinner time. Is that a Chicago thing? I'm from Missouri and we always eat dinner around 5 or so.
 
We gave up on the big ham feast a few years back...all our kids have blended backgrounds and by Easter afternoon, they've had their fill...so we do a cookout with burgers, dogs, & brats...a couple of salads, chips, cookies & bars...

For a big crowd, ham is probably the easiest...maybe a big pan of pasta...let others bring sides & desserts...

deviled eggs
fruit salad
potato casserole
green bean casserole
scalloped corn
scalloped pineapple
Jell-O salad
fresh veggies & dip
cold shrimp & sauce
rolls
 
We usually have 10-16 for easter. Depending on who shows up, I usually make a ham and turkey. Certain years we also do a vegetarian lasagne as we have a vegetarian. We always do 2 kinds of potatoes (scalloped and mashed) 2 veggies (corn and .. sometimes broccoli other times green bean casserole. We also throw either a salad out there or do veggies with dip. There is always rolls. Most gatherings I also make deviled eggs. Sometimes I will also make candied yams. A lot of the food you can make ahead of time and just heat it up (if needed to be hot) before serving it for dinner.

My SIL brings ham (which my husband hates and is the source of great consternation)

We serve 12 people and eat around dinner time.
 
If the 10 children (or a lot of them, anyway) all live in the general area, I would suggest that you all start rotating holidays. That's too many people to have to host ALL the time! My exH's family did this- 5 kids, everyone hosted xmas every 5 years, It was really nice. I believe they went in order of birth to make it easy to remember who's turn it was next.

To answer your question though, since you weren't looking for unsolicited advice :lol:, I have no idea what we're doing for Easter. Probably brunch- that's what we did last year & it was easier to get 'em in & get 'em out so we had the rest of the day off. ;)
 
We eat early for most holiday's apparently everyone turns into pumpkins at dark :)

Every year the menu is different, that's why it's so tough for me. If every year we had ham for example then I would know what to do. :) We are only hosting about 20-25 people so at least it's not the whole brood.

Thank you all for the suggestions, I can totally pull together a menu from this!!!

And this one too! Why have I been so sheltered from these pineapple recipes? This is the kids' favorite fruit, too.
 
We also do ham--we eat early, and then later we can have ham sandwiches.
We have a wonderful potato salad my mother in law makes--she calls in german potato salad--but it is different than ones you get in the store--just the potato thing is like a full meal
vegetables
lamb pound cake for dessert--or Easter Candy
Jello (we have several types--the favorite is the yogurt jello mold)

Snacks before hand---such as ritz crackers, dips, chiips, vegetable tray or shrimp tray

My sister always has lamb at Easter--her family loves it.

My Italian friends always have lasagna,

Or--you could all just do a brunch--pick a place and everyone go out--the only bummer is--NO LEFT OVERS!!
 
The scalloped pineapple is so good. My kids love it--I bring it to many church brunches--it is always a hit!!!
It is super easy to make!!! (bread, canned pineapple and eggs)

We make scalloped pineapple too - tear up a bowl full of bread, dump in a can of crushed pineapple, add a stick of butter, an egg or two, and some sugar, and mix it all together. It's one of those things that we don't really measure ingredients for, just mix stuff in until it looks right. Sorry I can't be more specific, but it's really good!
 
Do you have an Aldis near you. There spiral ham is great. Also how old are the 10 kids. If under 10 then you probably need a large pot of macaroni and cheese for them or some pasta dish. Also pigs in the blanket (hotdogs in biscuit dough) is a staple appetizer in my family.
 
One small thing that always said Easter dinner to me growing up was the lamb shaped butter my mom would get to go along with the rolls at dinner.
