What's for Easter dinner?

Pineapple casserole Recipe:

2, 20oz cans crushed pineapple
1 stick butter, melted
1 cup of sugar
6T flour
8 oz shredded cheddar cheese
1 stick/tube of Ritz carckers, crushed
1T vanilla

Mix everything except Ritz crackers in a bowl and put in a greased 13 x 9 casserole dish. Sprinkled crushed Ritz crackers on top. Bake for 35 mins at 350 degrees.

So easy. Tastes soooooooo good.
 
If you decide to make deviled eggs, buy your eggs now. The older (NOT BAD) the eggs are, the easier they are to make with boiled eggs. You can make them with new, freshly laid eggs, but in my experience, the shells stick more with fresher eggs.

Deviled eggs, ham, augratin potatoes, rolls, green bean casserole and a cake shaped like a bunny (you can do this with two 9 inch rounds) are Easter staples here. I was also going to give this advice about older eggs being better. Buy your eggs now if you want to be able to peel them. Also this is a great way to use the eggs that you dye for the egg hunt (if you do that).
 
We do a Ham too and LOVE the brown sugar glaze....do you use yellow mustard? I just made one about 3 weeks ago, but looking forward to cooking another one.

Yes, mom has been making the glaze for yrs...I should get the recipe from her...someday she will not be here to make it for us any more...I don't wanna think about it...but her and my dad aren't getting any younger!
 
We are only having 6 for Easter lunch but have some family coming over for dessert (and an egg hunt) later in the afternoon.

Crab cakes
Spinach
Green beans with pine nuts
Pasta
Rolls

Homemade cheesecake, chocolate covered strawberries, and Jello for dessert

this is so good--might sound weird but it is delish!
 
I am just doing Brunch. My DH needs to leave for work at 1:45 and my older son is staying at school unless he finds a ride home and back.

I am making ham, scrambled eggs, cheezy hash brown casserole, ****ins & fruit.

Just found out we are having 6 more for lunch. Now I'm thinking I need to rethink my menu to adjust for more people.

We are eating at 12:30. Should I stick with a lunch menu or can I get by with a brunch menu that late?

I just bought 4 dozen eggs yesterday and would love to get rid of a dozen with an egg casserole and maybe a few in a french toast casserole too.
 
Maggiano's, we do the buffet every year. Cooking and is such a PIA. Never fails through people are always late and it takes forever to decide what we want.
 
All the recipies sound great for your menu, just wanted to say the biggest thing I've learned is making almost everything ahead of time!

Try to limit the amt of dishes that have to be served hot at the same time. I hate having a big group of people who all seem to want to chat with you in the kitchen while you're trying to get all the last minute things on the table.
Do stuff ahead and don't work so hard once your guests arrive :flowers:
 
Doing the :snoopy: dance here,... I'm not really cooking this year!!

I am rotisserie cooking a turkey breast
Making a fruit plate with pineapple, oranges, watermelon, strawberries, grapes and blueberries
making a kit kat cake
and making blueberry cheesecake bites!

ETA: And the blueberry cheesecake bites have been nixed!! Love not cooking!

Menu is finalized and I just need to do a little shopping tonight for some last minute things.

Veggie tray w/ hummus for an appetizer

Baked ham
Bacon
Smoked salmon
Diced breakfast potatoes
Apple filled French Toast
Caesar salad
Fruit plate

Cheesecake, cake pops, and egg-shaped Rice Krispie treats for dessert!

My mom made mock apple slices with Ritz crackers and no one could tall the difference.
 
I'm making turkey, dressing, perdue roaster, ham, green beans, cabbage, fried corn and dinner rolls. For sweets I'm baking a red velvet cake and a carrot cake.

We should have left overs for next week and I can get a break from cooking!!
 
Deviled eggs are made, about to whip up the Kit Kat Cake... I'll cut the fruit in the morning so it's really fresh looking.... easy peasy Easter this year!
