What's For Dinner?

Tacos and Mexican rice for us tonight and tomorrow I am making a chicken and dumpling recipe in the crockpot. After that who knows.
 
Oven baked pork steak and I made homemade sweet and sour sauce to pour over it with sliced onions also. Oven roasted potatoes and will have rolls also.

as a sign of relish?

In certain Asian countries it is considered polite to show your appreciation to the cook if you burp after eating a meal. LOL
 
Food on the run as it is my DD last basketball game for the season. Just hoping it is not the last one of her career.
 
Taco salad and I made an angel food cake with 7 minute frosting on it. First time making that frosting and it came out really nice. Proud of myself!
 
Hey Val- when you make bread/rolls etc, do you knead it by hand or use the dough hook on the mixer?

Dough hook on my mixer. Used to use my bread machine on just the dough only setting but DH got me a nice big Bosch Mixer for Christmas last year so now I use that. Haven't had a bread recipe flop on me yet.
 
Ham steak (but I only got one don't know why because it won't be enough) so some leftovers for me. Velveeta shells and cheese from some deal last year, canned corn and carrots.
 
Really tasty 3 bean chili made in the crockpot. Soaked a cup of kidney, cup of northern, and cup of black beans overnight. Rinsed and drained beans and added 1 TBSP EVOO to bottom of crock pot. Added beans, 1/2 cup (uncooked) quinoa that I cooked last night (so however much that is after cooking) and chopped veggies - 2 jalapenos, 1 red pepper, 1 large onion, 5 cloves garlic, kale (leaves). Also added 1/4 tsp salt, 1/8 tsp black pepper, 1/4 tsp basil, and 1/4 tsp chipolte spice (I think it was smoked chipolte spice that I found at Doms hanging in a little bag in their produce dept), 2 cans diced tomatoes, 4 cans tomato sauce, and enough water to cover. I cooked it on low for about 10 hours. We topped with cheddar cheese. This is a recipe I will make again as it was very tasty and easy. I did the prep last night and just combined it all in the morning.

Yesterday was also a (fairly) easy but very tasty dinner. I made spaghetti squash and zucchini lasagna. The biggest deal is baking the spaghetti squash, but that can be made ahead and it can also be made in the microwave (just make sure you poke it so it doesn't explode). It was just layers of spaghetti sauce, thinly sliced zucchini (I used 2 smallish ones), spaghetti squash, cottage cheese, mozzarella cheese, repeat. Then top with ground pepper and parsley. Bake at 350 for 45 minutes. Every 15 minutes you have to use one of those turkey baster things to suck out the excess water since pasta normally soaks it up but there is no pasta in this recipe. Funny story - I don't have a turkey baster so dh got 2 straws and an empty 2L bottle and sucked the water out. Then later on that night I made smoothies for the kids but somehow that little rubber ring that seals the blender is missing so dh used a foam plate and made a ring with it to seal the blender. It worked perfectly.
 
I'm defrosting the fixin's for baked ziti. I'll make a double batch tomorrow while I'm watching the snow pile up and will freeze some for another time.
